Diploma in Advanced Professional Cookery
This qualification is aimed at candidates who have progressed from level 2, or require further training.
We will need to make an initial assessment of each learner prior to the start of the programme to ensure entry on an appropriate type and level of qualification.
The advanced diploma offers training in the following units:
- Supervisory skills in the hospitality industry
- The principles of food safety supervision for catering
- Practical Gastronomy
- Advanced skills and techniques in producing;
- vegetables, vegetarian dishes, meat dishes,
- poultry and game fish and shellfish
- biscuit cake and sponges
- fermented dough and batter products
- hot cold and frozen desserts
- petits fours
Assessments are carried out through assignment writing, practical activities, and short answer questions.
You will also gain work experience in different catering establishments. If you have specific needs such as reading or writing difficulties, you will receive extensive support.
