Diploma in Introduction to Professional Cookery
You will develop a broad understanding of the hospitality and catering industry. The importance of Food safety in catering, develop the basic knowledge and understanding of the principles of health and safety in the workplace. You will gain an introduction to healthier foods; kitchen equipment; personal workplace skills and professional cookery. You will learn how to prepare and cook food by boiling, poaching, steaming, stewing, braising, grilling and many more.
Much of the work takes place in our training kitchen where you will have the opportunity to prepare meals for sale. You will also gain work experience in different catering establishments. If you have specific needs such as reading or writing difficulties, you will receive extensive support.
